To make dressing, thoroughly mix vinegar, thyme, 1/2 teaspoon salt, and crushed pepper; whisk in oil. Reserve. Cook sweet potato in salted, boiling water until just tender, 3 to 5 minutes. Drain potatoes. Gently fold in reserved dressing; cool to room temperature. Fold in 1 teaspoon salt, onion and celery. Can be made up to 12 hours before serving. Return to room temperature before serving. Yield: 6 servings |
