Cheffy Baby's Oso Sweet Brandied Onion Sauce for
Shrimp or Seared Pork Tenderloin
1 Oso Onion chopped 2 cups brandy 1 tablespoon oil 1 tablespoon soy sauce 1 cup orange (canned) orange sections 1 cup chicken stock (canned) 2 cups heavy cream
Saute onions in oil on mediuum heat until clear. Add brandy and reduce 80%. Add chicken stock and reduce 80%. Add cream and reduce 50%. Add soy to taste and orange segments.
